Chicken Soup for the Tired Soul:
250gms Chicken - small pieces on the bone
1tbsp fresh ginger and garlic paste
1 Veg Maggi cube
1 small onion finely chopped
1/2 tbsp oil
1 tsp cumin seeds
1/4 cup coconut milk
Salt as per taste
Pepper as per taste
2 tbsp Coriander - chopped
2 tbsp Mint - chopped
Pressure cook the chicken with the ginger and garlic paste, onion and Maggi cube.
Once the pressure is release, add coconut milk and mix well.
Add, coriander, mint salt and pepper and bring to a boil. Then simmer.
In a tadka pan, heat oil and add cumin seeds.
Add to the soup and cover for a few minutes.
Voila!
